Skinny Sweet Potato, Kale & Chickpea soup
Ingredients:
1/2 Tablespoon Olive/Rapeseed/Coconut oil
30g Onion, chopped
1/2 a thumb-sized piece of fresh Ginger, grated
1 Crushed Garlic Clove
550ml of Vegetable stock
250g of Sweet Potato, cubed
Handful of Kale, chopped
1/2 Can Chickpeas
Salt & Pepper
Method:
In a large pan heat the oil. Reduce the heat and add the onion, garlic and ginger until soft. (2 mins)
Next add the sweet potato and cook for a further 2 mins.
Add the stock and simmer for 25 mins until the sweet potato is soft.
Then add the chickpeas and kale and cook until wilted.
Remove from the heat and allow to cool for 5 mins.
Blend until fairly smooth. Return the soup to the pan and heat for 5 mins. Season to taste, serve and enjoy!
