3 Post Bariatric Surgery Lunch Ideas

Having undergone bariatric surgery doesn’t mean your meals have to be dull. Embrace these three nutritious lunch or dinner recipes that guarantee both flavor and balance. Savor these tasty dishes and relish the joy of eating well after your surgery.

CHILLI CON CARNE WITH JACKET POTATO

Ingredients

1 baking potato
2 tablespoons olive oil
½ large onion, finely chopped
200g beef mince
1 tablespoons chipotle paste
½ x 400g can chopped tomatoes
½ tin kidney beans

1 chicken stock cube
100ml pot soured cream
¼ small pack chives, snipped
Mixed leaves, to serve

Method

o Heat oven to 200C/180C fan/gas 6 and prick the potato all over with a fork. Use
1 tablespoon of the oil to rub over the potato and place on a baking sheet in
the oven for about 1 hr until cooked through

o Meanwhile, make the chilli. Put the remaining oil in a deep frying pan over a
medium heat. Add the onion and cook for about 10 mins until softened. Add
the mince, breaking up with a wooden spoon and stirring until turning pale. Stir
through the chipotle paste, cook for 1 min, then tip in the tomatoes, kidney
beans and crumble over the stock cube and season well. Cover and simmer
over a gentle heat with the lid on for about 40 mins, stirring occasionally

o Remove the lid from the chilli and cook for 10 mins more. Once the potato is
cooked, halve and top with the chilli, a dollop of soured cream and a sprinkling
of chives. Serve with mixed leaves

 

SMOKED SALMON AND CREAM CHEESE
SANDWICH THIN

Ingredients

1 x wholemeal sandwich thin
2 teaspoons reduced fat soft cheese
2 slices smoked salmon
30g cucumber, sliced
Small handful rocket leaves
Squeeze lemon juice
Seasoning to taste

Method

o Toast a wholemeal sandwich thin
o Spread with reduced fat soft cheese
o Top with 2 slices of smoked salmon, thinly sliced cucumber and a small handful
of rocket leaves. Finish with a squeeze of lemon juice and ground black
pepper

 

 

TUNA PASTA SALAD

Ingredients

50g wholewheat pasta
100g tin tuna
50g cannellini beans
½ red onion
Zest and juice of ½ lemon
Large handful parsley

Method

o Cook the pasta according to pack instructions
o In a separate bowl combine all other ingredients and mix with cooked pasta
