Comforting Carrot, Coriander & Ginger
1 Tablespoon Olive/Rapeseed/Coconut oil
1 Onion, sliced
1 Thumb sized piece of Fresh Ginger, grated
450g Carrots, sliced
1 tsp Ground Coriander
1.2 litres/2 pints Vegetable stock
Fresh Coriander, roughly chopped
Salt & Pepper
Heat the oil in a large pan and add the onions, ginger and the carrots. Cook for 3-4 minutes until soft. Stir in the ground coriander, cook for 1 minute.
Add the stock and bring to the boil. Simmer until the vegetables are tender.
Blend until smooth. Gently heat through, stir in the fresh coriander, serve and enjoy!
