Hearty Bean, Tomato & Kale Soup
1 Tablespoon Olive/Rapeseed/Coconut Oil
1 Carrot cut into chunks
1 Celery stick cut into chunks
1 Onion roughly chopped
1 Bay Leaf
1 Tin chopped tomatoes
700ml Vegetable stock
1 Tin Borlotti/Cannellini Beans
200g Kale roughly chopped
1/2 Teaspoon Parsley
1/2 Teaspoon Fennel seeds
Salt & Pepper
In a large pan heat the oil and add the Bay leaf, carrot, celery and onion until soft (roughly 4 mins). Add the tomato and stock and leave to simmer for 20 mins. Add the herbs, beans and kale and cook for a further 5 mins. Blend until smooth, season to taste. Serve and enjoy!
